There is always time for tea and cake...Chocolate cake that is...

I couldn't sleep last night. The thought of chocolate cake was hunting me for a while now. So I decided I will just make it and get over it :-) Did I mention that food is my obsession? I was going for a healthy cake altogether but then I just used full fat mascarpone cheese and the whole calorie counting went out the window. At least I managed to keep it gluten free. (just a note here, we are not gluten intolerant, I am just trying to make food that is suitable for more people).

Chocolate cake with berries




This cake is easy to make, but it looks and tastes the business. Just make it. You will make yourself and your close ones happy:-)

Recipe is inspired by Kinga Paruzel

For the cake you will need:
20cm round cake tin
0.5 cup raw cacao
0.5 cup coconut flour
0.5 tsp cinnamon
pinch of salt
2 tsp baking powder
6 eggs
0.5 cup maple syrup (or other sweetener of your choice)
0.5 cup melted coconut oil
1 tsp vanilla paste (or vanilla extract)
0.5 cup almond milk (or other milk of your choice)

For the filling:
375 g mascarpone cheese
2 tbs maple syrup (or other sweetener)
1 tsp vanilla paste
2 handfulls of frozen raspberries

For decoration:
100 g dark chocolate
1 tbs cocoa butter (or coconut oil)
1 tbs maple syrup
berries of your choice

Preheat the oven to 160C (fan assisted) and prepare the tin. Sieve the flour, cacao, cinnamon, salt and baking powder into one bowl. In another bowl mix well the eggs, oil, milk, maple syrup and vanilla paste. Mix both bowls together until it becomes smooth batter. Pour to the tin and bake for about an hour (until the toothpick comes out clean). Let it cool completely.

To make the filling, mix the mascarpone with maple syrup, vanilla paste and raspberries and keep in the fridge until the cake cools down.

When the cake is cold, cut it in half and spread the filling on one part. Cover with another and spread the rest on top and on the sides. Melt the chocolate with cocoa butter and maple syrup for about 1 min in the microwave, until all ingredients are combined (you might need to do it in the 15s intervals and mix every time). Pour the chocolate on the edge of the cake and decorate with berries.
