Chocolate almond butter cups


I have to admit - I think I might be addicted to almond butter. I can just eat it with a spoon. I keep a jar at work to have it as a snack. I would have it on toast, on pancakes - you name it. But almond butter and chocolate... you cannot beat this combination!

Raw chocolate is easily accessible but you can also make it yourself! And somehow it is very satisfying process!

With the ingredients below you should be able to make 8 cups.

Silicone or paper muffin cases
100 g cacao butter
8 tbs cacao powder
1 tsp vanilla paste (or half vanilla pod)
3-4 tbs maple syrup or honey (depending how sweet you want it)
150 g good quality almond butter (small jar)
pinch of salt
8 whole skinless almonds

First melt the cacao butter in the bowl over the pan of boiling water. Take off the heat and add vanilla and cacao. Mix well. Add maple syrup or honey (you could use agave if you like too) and mix again. Spoon two tbs of chocolate into the muffin cases and leave in the fridge for about 10 min until it sets.

Now spoon out the almond butter to the bowl, add salt and stir well.

After the chocolate is set, spoon 1 tsp or so of almond butter to the centre of the chocolate bottoms. Try to leave the edge clear or you will end up with messy cups like I did :-) Place one almond in the centre of the butter and spoon out about 1 tbs of melted chocolate on top to cover it. Place in the fridge for at least 30 minutes. And that is all!

Just one warning - they might be messy to eat but you won't care as they are seriously delicious and you might not be able to stop at one!
