Breakfast muffins

Mornings in my house are usually hectic and everyone is rushing. Sometimes sitting down at the table for breakfast is just not possible. My solution to the morning madness are these breakfast muffins. You can make them on Sunday and have your breakfasts sorted. It is also great little treat for school lunch boxes.

To make 12 muffins you will need:
2 large eggs
3 mashed bananas
375 ml milk 
2 tbs olive oil
3 tbs honey
3 cups oats
1 tsp baking powder
1 tsp cinnamon
pinch of salt
dried fruit, nuts or seeds

Set the oven to 175C (fan assisted) and prepare 12 cup muffin tin by brushing it with some oil. 
In a big bowl mix eggs, bananas, milk, oil and honey. Add oats, baking powder, cinnamon and salt and using spoon combine all ingredients. Don't be tempted to overmix or the muffins will turn out soggy. Pour the batter into muffin tin, sprinkle dried fruit or nuts (or whatever you want) on top and bake for about 30 min. When ready, take them out and leave for 5 min to cool a little before transferring to the wire rack. 
Tip: These muffins are better baked directly in the tin without paper cases as it gives them crispier outside.
