Yummy buttermilk blueberry pancakes

Kids and adults love them. They don't require a lot of experience and they are probably the first thing your kids cook themselves.

How to make perfect, fluffy indulgent pancakes?
Below is my way of achieving it.

Makes about 16:
3 eggs
2tbs light brown sugar
1tsp vanilla extract
1.5 cup self-raising flour
1 cup buttermilk
0.5 cup milk
Blueberries or other fruit you might like
Butter for frying

Beat the eggs with sugar and vanilla. Add flour and mix to make a thick dough. Mixing flour to eggs first allows you to easily get rid of lumps later. Add buttermilk and milk and mix again. You might need to add more flour or milk depending on the consistency you have at this point. The batter should be quite thick, almost too thick. Let it stand for at least 15 minutes or prepare it the evening before, cover with clingfilm and let it raise. When you are ready to make them just add fruit and mix. Fry on medium heat until golden. I usually keep them warm in the oven at 50C until all are ready.
So here it is, they are super fluffy, almost sponge like pancakes. Pour maple syrup and add more blueberries if you like. Once you grate lemon zest on top of it, you will get extra zing:)
